Glossary

A Wine Authorities Selection

These are winegrowers with whom we have close relationships. We are honored to have their wines brought to North Carolina, and in some cases even the US, for Wine Authorities’ customers. They offer a combination of authenticity, integrity, deliciousness and value that is difficult to achieve.

Chillable

White, sparkling, rosé, orange and light reds. These are wines that benefit from a slight or full chill.

Wines with no chill

Mainly bold red wines that when chilled would become muted and noticeably more tannic. Serve these slightly below room temp, but never fully chilled.

Sustainable

Wines which are non-certified organic from vineyards who only use chemical treatments in their vineyards under absolute emergency circumstances. Some are also certified Sustainable.

Organic

Wines where the farmer only uses vineyard treatments that are not synthesized by man.

Biodynamic

Biodynamic farms are extremely organic and treat their entire farm as a closed, self-sustaining environment, including raising animals to provide manure (fertilizer), and growing plants that can be minimally processed onsite into proxies for insecticides, fungicides, and herbicides. Labor intensive and harkening back to methods used for millennia, the various steps of biodynamic farming follow the lunar cycle and solstices.

Dry farmed

Wines from vineyards who do not irrigate their vineyards except under emergency circumstances. For example: a heat wave or drought which would kill their vines. Most wines from the EU are, by law, dry farmed. Dry farmed wines do not provide any health benefits as some snake oil salespeople would have you believe.

Natural (no sulfites added)

Wines without any additives. Some definitions of “natural wine” say the wine cannot have any added sulfites. Sulfites are still there, but only those that occur naturally during fermentation. This means the wine is in a constant state of change and rarely will two bottles of the same wine taste alike. They can be vibrant, primal and alive, but may also have some funk and stank. If you truly have a sulfite allergy you should not drink any fermented beverage nor eat any fermented food.
