This amber baddie is as natural as it gets! Organically farmed in the Sierra Foothills, hand-picked grapes are spontaneously fermented with native yeasts. The finished product is unfiltered and unfined. The resulting dry, medium-bodied elixir balances citrus fruits, Rainier cherry, apricot, slight bitterness and bright acids. The grippy tannins really tie the wine together; choose your own adventure and enjoy chilled or at room temp.

Serving Suggestion: Non-spicy Asian food is a knockout combo! Lamb biryani or kebabs; pickled foods. Caramelized Jerusalem artichokes w/ walnuts, farro, & feta.

Wondering what orange wine is? Here’s the scoop: white wine grapes are pressed, then the juice is left to ferment with the skins instead of being filtered off. This imparts more body, color, and texture, as well as yielding a much more natural, less processed wine. Quirkily, grapes most often found in sherry are used here: Palomino grapes for the juice, with Pedro Ximinez skins added to the fermentation and left to mingle for 25 days.

Serving Suggestion: Lemon grilled tilapia w/ jasmine rice. Any combo of hard sheep’s milk cheeses, such as Manchego, Roncal, or Ossau-Iraty.

This is one of the most adventurous and exciting wines we’ve tasted recently. An orange wine from the sherry region, aged in barrels previously used in the production of Oloroso. The “imaginary friend” of this wine is the skins of Pedro Ximenez, instead of its own Palomino skins, which winegrower Alex says are not as delicious tasting as those of PX. This is not only an exotic and interesting production method, but the wine tastes fantastic and engaging!

Serving Suggestion: Grilled beef tenderloin topped w/ sauteed foie gras & drizzled w/ a Pedro Ximenez reduction & sprinkled w/ fried shallot slices.

SEMI-DRY SEMI-SPARKLER; DRIED APRICOTS & SPICE

Gather 'round, Greek geeks! This is a traditional semi-sparkling, semi-dry orange wine from Zitsa. Temperate climate and high altitude (up to 4,000 feet) helps preserve acidity - essential for any sparkling wine - in the native Debina grape. Suggestive of sweet dried apricots, a whiff of apple, baking spice, and a sherry-like oxidative quality ... and then along come the light bubbles and acidity to cleanse the palate. Clocking in at only 10.5% alcohol, it's light and refreshing, a great start (or end) to any meal.

Serving suggestion: Liver pâté w/ crusty bread & plenty of olives. Ricotta cheesecake w/ caramelized peach puree. Sitting on the porch swing on a cool fall evening, watching the leaves spiral down.
