Coteaux de Layon, itself, is a lofty enough appellation for sweet wine. Some of the world's most revered dessert offerings come from this westerly enclave of the Middle Loire. The Premier Cru portions of this celebrated terrain have, by definition, earned an even more prestigious pedigree. Understandably, these thangs ain’t cheap. But! How often can a wine lover get their hands on the crème de la crème of a certain wine genre or ambassador for the capital of a certain style without crossing into the triple digits? Not often at all, but here’s a spectacularly delicious, rare opportunity.

The sugar ratio goes through the roof and the grapes take on natural musk, so we end up with silky sweet and intensely flavored passito that seems to float over the tongue.

Domaine de Suremain is a biodynamic estate located in the village of Monthelie the Cote de Beaune, right outside of the more famous Meursault. Eric and Dominique Suremain produce both white and red Burgundy, plus Marc de Bourgogne and this very rare Ratafia made from 100% Chardonnay grapes. Ratafia, traditionally produced in Champagne, is a combination of unfermented grape juice (typically from the red grape Pinot Meunier) and Marc de Bourgogne (brandy). This bittersweet, nutty concoction is a perfect complement to almond desserts and strong cheeses.

Serving Suggestion: French almond cake w/ chantilly cream. Prodigal Farm Saxapahaw Blue cheese w/ fig jam.

Not just any mold, botrytis is a truly noble rot which contributes its fuzzy charm to the exteriors of late-harvested grapes destined for the world's most celebrated dessert wines. Sauternes, a southerly enclave of Bordeaux, is arguably the capital of this unexpected but beautiful phenomenon. The traditional Sémillon, Muscadelle, and Sauvignon Blanc grapes are concentrated by the fungus's leeching out of moisture from the grapes (a process which does nothing to endanger the health of the vines) into a decadent, nectary elixir which fermentation transforms into a decadent dessert wine (albeit one which is often not served with dessert).

Serving Suggestion: Often served w/ savory hedonistic fare such as patés & decadent cheeses. Japanese sun-dried persimmons & other sweet, shriveled fruits.

Arguably, the finest Tuscan dessert wine is Vin Santo (meaning either “holy wine” or “saint’s wine”), and the rarest of those is Occhio di Pernice. Made with dried Sangiovese grapes, it’s rich, with endless layers of dried fruits and nuts. Sweetness is tempered by light tannins and cleansing brightness, as if the heavens are shining down on you while you sip. It’s the eye of the partridge, it’s the thrill of the wine, rising up to cin cin with the angels.
