Sankt Laurent’s rise (or return) to relevance over the last two decades can be almost exclusively attributed to its work in this corner of Austria, Burgenland, extending westward from the Great Hungarian Plain. Its name is probably more often invoked in regard to its having been the lesser-known parent of Zweigelt (alongside Blaufränkisch) than in discussions of its own achievements (such as being the most significant red variety of the Czech Republic). This rendition from biodynamic Paul Achs is a splendid introduction (or affirmation) of the variety’s firm, rustic, intensely violet reputation. Gentle astringency and assertive, food-friendly acidity make it a masterful companion to old-world fare.

Serving Suggestion: Seared chicken livers w/ caramelized shallots & horseradish mustard sauce. Hearty potato pancakes w/ sour cream, dill, & pickled beets.
