Altosur, Cabernet Sauvignon, Mendoza, Argentina, 2020 100% Cabernet Sauvignon PERFUMY, BLACK PEPPER, CASSIS & BLACKBERRIES Textbook Cabernet Sauvignon and a stunning value considering that most cabs at this price are junk. This one really shines and is completely authentic tasting. From high elevation vineyards in the Andes Mountains this cab comes roaring out with firm, rich flavors and a long finish. The balance and purity are very impressive. Great structure this vintage. Very serious Cab flavors for the money. Serving Suggestion: Bison burgers with sharp cheddar. Calcu, Cabernet Sauvignon, Colchagua Valley, Chile 2017 100% Cabernet Sauvignon CASSIS & BLACKBERRY, AROMATIC PEPPER & TOAST This textbook Cabernet Sauvignon is a stunning value, showcasing Colchagua’s propensity toward herbaceous, peppery flavors and aromas. Muscular ripeness and beautifully balancing acidity make for an impression that is as pretty as it is powerful. Whispers of Carmenere and Petit Verdot (coupled with French oak aging) lend delicious echos of Cabernet’s Bordelais ancestry. Yum! Serving Suggestions: Bison burgers w/ sharp cheddar or blue cheese. 2017 Cabernet Sauvignon (Mas Codina)
Mas Codina, Cabernet Sauvignon "CS", Penedes, Spain 2017 Cabernet Sauvignon RIPE & SPICY. BLACK CHERRY & CURRANT. TASTY! Toni Garriga is a man on a mission. His family has made wine here in the mountains of Penedes for nearly 400 years, but rarely from their own grapes. Beginning in 1985, he decided to focus exclusively on "estate wine," wine made only from the grapes he grows. With great pride he presented us with this Cabernet, spicy and lush with lovely black cherry fruit. He ages it in small French oak barriques for 12 months before bottling to soften it and add complexity. Thanks Toni for this tasty treat! Serving Suggestions: Pan-grilled Beef Tenderloin over fois gras in a Pedro Ximenez reduction. |

2017 Cabernet Sauvignon (Peñalolén)
Peñalolén, Cabernet Sauvignon, Maipo Valley, Chile 2017 75% Cabernet Sauvignon, 9% Cabernet Franc, 8% Petit Verdot, 8% Merlot CURRANT & BLACKBERRY, CLASSIC, BALANCED BY BRIGHTNESS Not to (almost) admit to judging various books by their covers, but this classically structured Cab from Chile’s Maipo provides a bit of a surprise. Its unconventional, perhaps trendy, label and predictable 14% alcohol might lead one to expect an ultra-modern, aggressively New World-ish outing (not that there’s anything wrong with that!), but this has a brighter, more classically Cab-ish edge that wouldn’t be out of place in riper, more contemporary Left Bank Bordeaux. Hailing from a well-drained, gravelly slope, this impressively structured creature includes small portions of Merlot and Cab Franc in an appropriate nod to Cabernet Sauvignon’s Bordelais traditions. Serving Suggestion: London broil w/ cracked pink & black peppercorns w/ garlicky gai lan & roasted new potatoes. Empanadas w/ black beans, onion, black olives, & bell pepper. |

2018 Cabernet Sauvignon (Hyatt Vineyards)
Hyatt Vineyards, Cabernet Sauvignon, Rattlesnake Hills, Washington, 2018 93% Cabernet Sauvignon, 5% Merlot, 2% Syrah SPICY & FLAVORFUL, DRIED BLUEBERRY & CURRANT Hyatt is a small, domestic winery that's doing it right. Established in 1983, they make great wines at reasonable prices that are stinkin' good. Their Cabernet Sauvignon is a great domestic value and shows complex berry flavors that are typical of this part of Washington. The aromas are pure Cabernet Sauvignon, while the wine's mouth-feel is lush and supple with balanced tannins which makes it a more versatile and less edgy Cab. Serving Suggestions: Veal chop with porcini mushrooms and demi-glace. Cedar plank grilled pork tenderloin with herbed butter and Moroccan couscous. |

2018 Cabernet Sauvignon (Cederberg)
Cederberg Winery, Cabernet Sauvignon, Cederberg, South Africa 2018 100% Cabernet Sauvignon BLACKBERRY & CASSIS, CHOCOLATE & CEDAR, PEPPER & HERBS Cabernet isn’t the first red variety which springs to mind when most of us think of South Africa. That distinction would almost certainly belong to the essentially exclusive and increasingly illusive Pinotage. Cab, however, is the grape responsible for the most Cape’s most revered reds. This broad-shouldered beauty's rich, ripe fruit and creamy oak influence lend an air of sumptuousness while the pepper-like and herbaceous notes hint a bit at Cab's more Cab Franc or Carmenere-ish side. Serving Suggestion: Smoked venison roast w/ peppery collards & shallots. Mashed potato-stuffed poblano w scallions, garlic, & melted Monterey Jack. |

2018 Cabernet Sauvignon "Glass Collection" (Glenelly Estate)
Glenelly Estate, Cabernet Sauvignon "Glass Collection", Stellenbosch, South Africa 2018 {sustainable} 100% Cabernet Sauvignon CASSIS & BLACK PLUM, ROASTED BELL PEPPER, FRESH & FRAGRANT Cabernet Sauvignon, like many (if not most) varieties, comes in different shapes and sizes. From the lithe, gleamingly black-fruited output of northwestern Bordeaux to the dense, decadent, and resoundingly ripe renditions of Napa, Cab’s a man of a thousand faces (sorry, Lon!). This rendition from the venerable vineyards of the Glenelly Estate carries off an impressive balancing act, bridging the brighter intensity of the grape with resolutely new-worldish inclinations, robust ripeness, and a pronounced peppery note that wouldn’t be out of place in close relatives Carmenere or Cab Franc. Gussied up with a chocolate-like richness courtesy of a year in French oak, it is delightfully multifaceted. Serving Suggestion: Beef & lamb sausage w/ coriander seeds, black pepper, & allspice. Roasted poblanos stuffed w/ savory smoked jackfruit. |

2019 Cabernet Sauvignon Reserve (Sophenia, Finca)
Finca Sophenia, Cabernet Sauvignon Reserve, Tupungato, Mendoza, Argentina 2019 100% Cabernet Sauvignon FANTASTIC, FIRM CABERNET WITH A LONG FINISH Very impressive classic cherry Cabernet flavors with a perfect balance between acid/tannin and fruit. The finish is long and deep showing ample toasty oak, but never cloaking the fruit. The high altitude vineyards give us grapes with super ripeness, never losing their backbone. The winemaking here is stellar- in a style that pushes the fruit but never overdoing it. We wish all inexpensive cabs could taste this balanced. Serving Suggestion: A nice Cabernet likes to saddle up to red meats like a NY strip steak; tri-tips marinated in garlic and soy sauce; and a burger is not too good for this wine either! |
