Revealing dusty cherry fruit from cool climate Mendocino, this Cab leaves out the oak baring the ripe black cherry fruit beneath a currant layer with supple tannin. That distinction would almost certainly belong to the essentially exclusive and increasingly illusive Pinotage. Cab, however, is the grape responsible for the most Cape’s most revered reds. This broad-shouldered beauty's rich, ripe fruit and creamy oak influence lend an air of sumptuousness while the pepper-like and herbaceous notes hint a bit at Cab's more Cab Franc or Carmenere-ish side.

The vineyard covers a broad 400 acre swath of sloping hills and fog-prone valleys with a dizzying variety of soil types. This blend, composed of Cabernet Sauvignon with touches of Cabernet Franc, Petit Verdot, and Malbec was aged for 20 months in French oak (45% new). We love this wine’s balance of concentrated ripe fruit, woodsy spice, and earthy green pepper. Powerful enough for aging 10+ years but ready to grace your table tonight.

Their Cabernet Sauvignon is a great domestic value and shows complex berry flavors that are typical of this part of Washington. The aromas are pure Cabernet Sauvignon, while the wine's mouth-feel is lush and supple with balanced tannins which makes it a more versatile and less edgy Cab.

Toni Garriga is a man on a mission. His family has made wine here in the mountains of Penedes for nearly 400 years, but rarely from their own grapes. Beginning in 1985, he decided to focus exclusively on "estate wine," wine made only from the grapes he grows. With great pride he presented us with this Cabernet, spicy and lush with lovely black cherry fruit. He ages it in small French oak barriques for 12 months before bottling to soften it and add complexity. Thanks Toni for this tasty treat!

Not to (almost) admit to judging various books by their covers, but this classically structured Cab from Chile’s Maipo provides a bit of a surprise. Its unconventional, perhaps trendy, label and predictable 14% alcohol might lead one to expect an ultra-modern, aggressively New World-ish outing (not that there’s anything wrong with that!), but this has a brighter, more classically Cab-ish edge that wouldn’t be out of place in riper, more contemporary Left Bank Bordeaux. Hailing from a well-drained, gravelly slope, this impressively structured creature includes small portions of Merlot and Cab Franc in an appropriate nod to Cabernet Sauvignon’s Bordelais traditions.

Serving Suggestion: London broil w/ cracked pink & black peppercorns w/ garlicky gai lan & roasted new potatoes. Empanadas w/ black beans, onion, black olives, & bell pepper.

From the lithe, gleamingly black-fruited output of northwestern Bordeaux to the dense, decadent, and resoundingly ripe renditions of Napa, Cab’s a man of a thousand faces (sorry, Lon!). This rendition from the venerable vineyards of the Glenelly Estate carries off an impressive balancing act, bridging the brighter intensity of the grape with resolutely new-worldish inclinations, robust ripeness, and a pronounced peppery note that wouldn’t be out of place in close relatives Carmenere or Cab Franc. Gussied up with a chocolate-like richness courtesy of a year in French oak, it is delightfully multifaceted.

We're going to the Moon! Moon Mountain of Sonoma (aka Napa's Mount Veeder) is part of the Mayacamas Mountains, which divide the region from Napa. Though the AVA designation here is new, these hillsides are home to some of the most historic mountain vineyards in California, dating to the 1890s. High elevation and rocky, volcanic terrain imbue Moon Mountain Cab with uncommon richness and intensity while Caton gives his wines the deluxe California Cabernet treatment with plenty of French oak barrel aging. The result is sizable with dark fruit, creamy vanilla, and suave tannins that you'll be over the moon for. Only 600 cases made!

Serving Suggestion:  Grilled beef liver with caramelized onion and mushrooms.  A savory winter stew with plenty of carrots, potatoes and bay leaves floating around.
