Though this cuvée from our friends, Céline & Laurent Tripoz, may take its name from the fact that it sees a short period of oak aging in a combination of new and older barrels, oak is far from this gorgeous white's foremost defining characteristic. Brimming with a waxy yeastiness that resembles that of some champagne and a winning combination of golden apple and tangy tropical fruit, this classical southern white Burgundy allows its time in oak to reveal itself as a delectable toasty spice that is as subtle and as integrated as it is sumptuous.

Serving Suggestion: Panfried trout in a buttery white burgundy sauce w/ pickled white asparagus salad. Chanterelle quiche w/ dill & mustard.

Mature, elegant Chardonnay is something that gets us really excited. Really, quite, very excited.  Unfortunately, few Chardonnays are built to age gracefully, and those that are tend to be prohibitively pricey, but after six years of bottle aging, Belle Pente's Chardonnay is still drinking beautifully.  In one local touch you won't often see, Belle Pente uses 50% homegrown Oregon oak, in addition to 50% French oak.  Despite what sounds like a lot of oak from all over, the wine is not too oaky, since only 10-15% of the barrels are new. Harvesting in two waves gives the wine a perfect balance between rich ripeness and fresh brightness.

Serving Suggestion: Creamy homemade mac and cheese w/ Firsthand Foods Country Breakfast sausage crumbles. Carrot salad w/ lemon-Dijon vinaigrette.

Just an hour and a half west of Cape Town lies the up-and-coming appellation of Robertson and the heavy limestone soil which it shares with some of the greatest white wine regions (like Champagne or Chablis). And while the area doesn’t have the same renown as its chalky-soiled counterparts, the great wines of the region certainly hold their own. “Limestone Hill” greets you with a bouquet of juicy golden apples, leading into an herbaceous note, reminiscent of fennel or carrot tops. A few months of bâttonage add a richness to the chalky minerality and long and clean finish.

Serving Suggestions: Oysters (fresh or steamed). Shrimp linguine w/ cream sauce.

Gandines really surprised us with this compelling, and serious White Burgundy. Fully ripe and lush, but with juicy acidity and complex minerality. This kind of power usually comes from the big boys north of the Macon in the Cotes de Beaune. Aged in enormous 3000 liter old oak barrels that soften the wine without giving it any oak flavor, it is possibly the most impressive Chardonnay available at this price!

Serving Suggestion: Steamed or raw oysters. Black sea bass poached in olive oil with fresh thyme. Roast turkey with truffles or chanterelles.
