2018 Chianti Classico (Vallone di Cecione)

Vallone di Cecione, Chianti Classico, Tuscany, Italy 2018

{organic} 90% Sangiovese, 10% Canaiolo

CLASSIC & PRETTY. DUSTY PLUM, PROSCUITTO, EARTHY.

From one of only a few remaining farms in the hands of a family from Panzano, in the heart of the “black rooster” Chianti Classico zone comes classic example, that is both pretty and serious, with the typical flavors of dried fruit, cured meat and earth. Aged shortly in old oak barrels to mellow and meld the flavors, it’s capable of conjuring Tuscan memories from events you may have never experienced. Contemplative.

Serving Suggestion: Veal chop, with sage, garlic, white beans, and drizzled with the freshest olive oil.

{organic} 80% Sangiovese, with the remaining 20% comprised of Merlot, Cabernet, Canaiolo, Colorino

FRESH FOREST CHERRY, FINETOOTHED TANNIN, REFRESHING ACIDITY

Gleamingly red and brimming with life, this brilliant gem from the southwestern reaches of the Chianti appellations represents the brighter, more refreshing possibilities of Sangiovese and company. Not thin or “sharp” but spry, upbeat, timeless, and almost palate cleansing, this is the kind of Chianti that gets along splendidly with tomato-heavy cuisine and, to be honest, food in general. It’s extremely versatile. The Casabianca farm prides itself on its unspoiled landscape, environmental stewardship, and the beautiful wildlife that can be comfortably spotted in its proximity…hopefully while sipping at this ruby-in-a-glass.

Serving Suggestion: Thinly-sliced Chinese eggplant & sweet onion w/ olive oil, butter, oregano, pepper, & cinnamon. Cannellini bean & tomato salad w/ balsamic vinegar, pine nuts, & dried cherries.

Full-flavored and busting out at the Tuscan seams, this Morellino is more modern in style. No oak to be found, this juicy red is all tank fermented and bottle aged, ripe, lush and ready to drink.

2019 Toscana Rosso "Ilex" (Caprili)

Caprili, Toscana Rosso "Ilex," Tuscany, Italy 2019 {sustainable}

100% Sangiovese

FIRM BLACK CHERRY & CURRANT, OLIVE & BRAMBLY HERBS

Firmly structured and exuding youthful black fruit and typically Tuscan earth, the “Ilex” from Montalcino’s Caprili is made, appropriately, from the famed local clone of Brunello, Sangiovese Grosso. Grown organically and vinified utilizing only ambient / indigenous yeasts, this fantastic value comes to us courtesy of a methodology and respect worthy of this most most royal of Tuscan regions. While this minimally-aged outing isn’t likely to be mistaken for Brunello, this is seriously impressive stuff.

Serving Suggestion: Ragu of boar w/ button mushrooms & sun-dried tomatoes. Eggplant-stuffed portobello mushrooms w/ gorgonzola, garlic, & topped w/ fresh basil & parmesan.

2015 Vino Nobile di Montepulciano, Riserva (Fanetti (S. Agnese))

Fanetti, Vino Nobile di Montepulciano Riserva, Tuscany, Italy 2015

{sustainable} 85% Prunolo Gentile (Sangiovese), 10% Canaiolo, 5% Cabernet Sauvignon

DRIED CHERRY, CINNAMON HINT, PROSCUITTO, OLD SCHOOL

Vino Nobile is an historic wine. This was the very first DOCG certified appellation in all of Italy. Confusing to many foks, it is not made from Montepulciano grapes, but instead is from the village of Montepulciano. This is one of the great Tuscan wines. While Sangiovese is the main player in most Tuscan wines, Vino Nobile is no different, except they call it, Prunolo Gentile. Strictly traditional hand harvesting, bunch by bunch, cask aging in giant chestnut "botti" or wooden tanks, and declared only for Royalty, Vino Nobile still holds a royal mystique among wine drinkers.

Serving Suggestion: Prime aged beef, grilled with black pepper and drizzled with olive oil; grilled ciabatta bread rubbed with garlic and topped with prosciutto and olive oil.
