This restrained and refreshing gem is made mostly from Viura, the dominant grape in “Cava country” or Catalonia, where it’s known as Macabeu, but this is not Cava country. In fact, Finca Torremilanos is the only producer in Ribera del Duero which has been entrusted with the ability to describe its bubblies as “Cava.” Pristinely pale with vaguely emerald undercurrents, its born among vines aging as many as 180 years and mixes a minerally zest through its citrus and orchard fruit.

These are the driest of all sparkling wines. Toni Garriga spent the afternoon walking me around his vineyard planted by his family in the 1600's, tasting in his cellars and introducing me to his wife and dog. Nice guy, brilliant wines, amazing history!

Hailing from the Pinot Noir-centric Cote des Bar region of Champagne’s Aube (a relatively distant southeastern satellite area to the main drag of the more familiar Marne department), this deceptively fresh-faced cuvée is actually a combination of 2011 & 2012 vintages at present. True to form, it’s comprised predominantly of Pinot Noir and showcases the chalky terroir of its provenance beautifully with gentle toast and wisps of yeasty mystique that make great much great Champagne so difficult for other bubblies to compete with.

Of the impressive, non-Champagne areas that produce French sparkling wine under the name, “Crémant,” Alsace is perhaps the very most exciting. Arnaud Baur’s affinity for bubbly offerings has remained consistently and particularly impressive for us, and while this refreshing rosé may not quite rival its white counterparts in yeasty, Champagne-ish maturity, it more than rises to the occasion, stepping sideways and finding a fresher, more fruit-forward voice while remaining chiseled, very dry, and with traces of biscuity richness. This is their newest offering, a delectably refreshing "petnat" sparkling rosé with pretty mousse that evaporates gracefully on the palate. A touch of ruby red grapefruit aroma adds serious depth. Great stuff. (slight sediment from the natural fermentation in bottle is harmless)

Serving Suggestions: Breakfast? I mean, you shouldn’t (?) drink wine before noon, even on a Sunday, but seriously pair this with breakfast foods.

Blauer Wildbacher is grown almost exclusively in (and presumed native to) Austria’s Styria, where it’s utilized in the production of tart, pale, hyper-refreshing rosé. Beautifully and a bit confusingly, ten hectares of the elusive relative of Blaufränkisch and Chardonnay manage to exist in Italy. Prosecco maestro, Ultimi, crafts this simultaneously rich and refreshing rendition with a few months of aging on the lees to yield a delightfully creamy foil to the pervasive sharp red fruit.
