90% Viura (Macabeu), 10% Chardonnay {biodynamic}

CITRUS & ASIAN PEAR, CLEAN & CALCEREOUS

This restrained and refreshing gem is made mostly from Viura, the dominant grape in “Cava country” or Catalonia, where it’s known as Macabeu, but this is not Cava country. In fact, Finca Torremilanos is the only producer in Ribera del Duero which has been entrusted with the ability to describe its bubblies as “Cava.” Pristinely pale with vaguely emerald undercurrents, its born among vines aging as many as 180 years and mixes a minerally zest through its citrus and orchard fruit.

On the last day of a recent trip to Spain, we found this lovely small winery on a "down-low" tip from one of the owners of the top quality estate of this entire region. It ended up being a fantastic find for us, as this bubbly has soul, freshness, complexity and drinkability. Family-owned since the 1600's by the Garriga family, Mas Codina is a secret even in Spain. 2017 Cava Brut Rosé (Mas Codina)

Mas Codina, Cava Brut Rosado, Penedes, Spain, 2017

{organic} 100% Pinot Noir

MINERALLY WHITE CHERRY & BRIGHT RED PLUM, DELICATE TEXTURE, LOVELY ACIDITY

By law, all Cava must be produced utilizing a secondary fermentation in the bottle - "Méthode Champenoise," but few in this price range warrant such close comparison to the singularly elegant wines of Champagne as this delicate and keenly generous rosé from our friends at Mas Codina. Bright, restrained, and finely textured, this is a profound and understated sparkler which exudes sophistication and balance through every fun, refreshing bubble. As is the case in many of the best rosé bubblies, here red fruit is nuance rather than star, allowing minerality, floral notes, and gentle citrus each a voice in this highly memorable and complex sparkler.

Serving Suggestion: Braised pork shoulder w/ coriander, ginger, & cranberries. King prawn & artichoke tempura w/ avocado, miso flakes, & wild rice.

Champagne Blanc de Blancs (Grongnet)

Grongnet, Blanc de Blancs, Champagne, France NV

BOLD LIME, YEASTY & RICH, CHISELED BUT SOFT

This Blanc de Blancs (white wine]from white grapes – in this case, Chardonnay) is racy and very rich but still easy-going enough to serve as a sub for mystifyingly overpriced mega-production staples like Veuve Clicqout. Unlike the factory wines which dominate the world of Champagne today, this is handmade in minute quantities by a small, independent, family-owned vigneron. Mmmmm, the limey character and vibrant acidity are powerful and almost crystaline. Substantially more impressive than the refreshingly reasonable price might indicate!

Serving Suggestion: The classic pairing is with a triple cream cheese like Explorateur, but we'll go out on a limb and recommend it with Pigs in Blanket - made with brioche and quality charcuterie of course.

{organic} 75% Pinot Noir, 25% Chardonnay

CRISP GOLDEN APPLE & LEMON ZEST, PRETTY, CHALK & TOAST

Hailing from the Pinot Noir-centric Cote des Bar region of Champagne’s Aube (a relatively distant southeastern satellite area to the main drag of the more familiar Marne department), this deceptively fresh-faced cuvée is actually a combination of 2011 & 2012 vintages at present. True to form, it’s comprised predominantly of Pinot Noir and showcases the chalky terroir of its provenance beautifully with gentle toast and wisps of yeasty mystique that make great much great Champagne so difficult for other bubblies to compete with.

Serving Suggestion: Croissant crust quiche w/ smoked sturgeon, leek, & dill. Winter salad of golden beet, acorn squash, & parsnip w/ ginger, parsley, & lemon juice.

Bernard Gaucher, Brut Prestige, Champagne, France, 2010

60% Pinot Noir, 40% Chardonnay

BRIGHT APPLE & CITRUS, HAZELNUT & TOASTED ALMOND, FIRM & RICH

Champagne’s Aube region is an increasingly exciting destination (or perhaps it’s better to say “origin”) for lovers of outstanding sparkling wine to explore. Living up to the reputation built by greater Champagne’s more northerly climes, the wines of the Aube are often more Pinot-centric, and this 2010 vintage cuvée from Gaucher tips the scale at 60% Pinot Noir with Chardonnay comprising the remainder. Grown in Kimmeridgian soils similar to those of nearby Chablis, a balance of power, vibrant acidity, and mineralistic complexity may remind festive drinkers of great northern white Burgundy. Cheers!

Cécile Grognet represents the estate’s fifth generation, and a 120+ year legacy as a family of Champagne growers. Her expertise shines brightly in this beautiful bubbly.

We all have to choose our battles, and some of us have proudly taken up arms in pursuit of sparkling wines that taste like Champagne. This is what we’ve been fighting for! Of the impressive, non-Champagne areas that produce French sparkling wine under the name, “Crémant,” Alsace is perhaps the very most exciting. Arnaud Baur’s affinity for bubbly offerings has remained consistently and particularly impressive for us, and while this refreshing rosé may not quite rival its white counterparts in yeasty, Champagne-ish maturity, it more than rises to the occasion, stepping sideways and finding a fresher, more fruit-forward voice while remaining chiseled, very dry, and with traces of biscuity richness. Beautiful!

80% Pinot Noir, 20% Chardonnay

DELICATE MOUSSE, POMEGRANATE & WHITE CHERRY, GENTLE SPICE

Not far from Milan, Lombardy's Franciacorta region has provided Italy since 1967 with an official (and very eloquent) answer to France's Champagne. Viticulture has existed here, however, much longer. Today, both the grapes used and the methods employed are, by law, modeled after those of Champagne while guidelines and restrictions are, impressively, even more stringent and conducive to quality. In 1987, 20 years after the area's DOC status became cemented, a young Marcel Monzio Compagnoni founded the estate responsible for this elegantly subtle and intoxicatingly-perfumed bubbly.
