Ferociously fresh, the Brut Nature bubbly from Beaujolais’s Bulliat excels exceptionally. Made entirely from Chardonnay (as is the case with much Crémant de Bourgogne as well as Champagne further north) and, without even the faintest whisper of sweetness, it’s bone dry while maintaining a rich, mouthfilling ripeness reminiscent of crisp pear and creamy apple. A vibrant mineral component comes through elegantly and athletically on the finish. Pop!

Morgon, the second largest of the Beaujolais Grands Crus, is known for producing the most Pinot Noir-esque Gamays with an ability to improve with age. This example displays the bright fruit, earthiness, structure, and complexity you’d expect, then dials it up to 11 with amphora aging. Used by winemakers for over 6,000 years, this gives the wine depth and richness but adds no flavors like oak aging, allowing the terroir to shine.
