As the label suggests, this wine is all business when it comes to seafood. Juicy, dry and evocative of the sea, even before the aromas of your seafood dinner have chimed in. Made from the key grapes of the Sherry (Jerez) region, but not given the distinctive sherry-aging treatment; so think subtle Chablis, Verdicchio, or Muscadet as benchmarks. This young couple, Alex and Rocio, are hitting it out of the park. A Wine Authorities exclusive.

Serving Suggestion: Fried oysters or clams. Shrimp a la plancha. Flounder meunier. Simply stir-fried vegetables. Surprisingly, it is also great w/ fatty, umami-rich dishes.

This is Forlong’s Palomino-based take on a rich White Burgundy. Considering that the greatest White Burgs are grown in limestone soils, and the soil at Forlong is so limestony that it is pure white (Albariza), this is a great foundation. While it shows influence from its French target, Forlong winegrowers Alex and Rocio allow the wine to thrive in its own Adalucian personality, making this a singular wine of great class!

Serving Suggestion: Olive oil fried fish using chickpea flour. Tortillas de camarones (shrimp fritters). Cuttlefish sauteed in garlic & its own ink.

Harkening back to the methods of producing sherry prior to the 20th century, this is an exciting, micro-production, un-fortified version of a classic Oloroso. Only one barrel was made of this subtle “sherry” from Palomino grapes dried for 48 hours in the Andalcian sun to increase the sugars enough to boost alcohol above 15% so the flor would thrive. This is a great dry wine, or an great understated sherry, straddling both styles.

Serving Suggestion: Spanish Jamon in all of its incarnations. Roncal or Manchego cheeses w/ Marcona almonds & oil aged olives. Classic fried tapas!

LEMON, PINEAPPLE, LIGHTLY FUNKY. CHALK & ORANGE PEEL

Wondering what orange wine is? Here’s the scoop: white wine grapes are pressed, then the juice is left to ferment with the skins instead of being filtered off. This imparts more body, color, and texture, as well as yielding a much more natural, less processed wine. Quirkily, grapes most often found in sherry are used here: Palomino grapes for the juice, with Pedro Ximinez skins added to the fermentation and left to mingle for 25 days.

Serving Suggestion: Lemon grilled tilapia w/ jasmine rice. Any combo of hard sheep’s milk cheeses, such as Manchego, Roncal, or Ossau-Iraty.

BLOOD ORANGE, CELERY SEED, NUTTY SHERRY HINT.

This is one of the most adventurous and exciting wines we’ve tasted recently. An orange wine from the sherry region, aged in barrels previously used in the production of Oloroso. The “imaginary friend” of this wine is the skins of Pedro Ximenez, instead of its own Palomino skins, which winegrower Alex says are not as delicious tasting as those of PX. This is not only an exotic and interesting production method, but the wine tastes fantastic and engaging!

Serving Suggestion: Grilled beef tenderloin topped w/ sauteed foie gras & drizzled w/ a Pedro Ximenez reduction & sprinkled w/ fried shallot slices.

CRANBERRY, OLIVE, RASPBERRY, BRULEED VANILLA

In such a hot climate, you’d expect a red wine from these grapes to be heavy and alcoholic, but this is a fresh, bright wine which goes down very quickly and deliciously. Fermented in terra-cotta amphora, then aged shortly in oak barrels, this is a lusty, berry aromatic, juicy red to drink with gusto.

Serving Suggestion: Bone in porkchop lightly topped w/ a picholine & black cherry tapenade, served w/ homemade potato chips.

The Albariza soils of this vineyard give it a fine, spicy minerality, and its location so close to the sea imbues a saline/oceanic hint. It’s a delicious red that can only taste of this place!

Serving Suggestion: Hake cheek topped w/ pickled onions, & mint leaves. Rabbit croquettes. Spicy pork cracklins.
