Despite being overshadowed by Saint-Emilion proper, the four “satellite” appellations have helped lead the way in quality control and environmental stewardship. Championing a more sustainable form of viticulture, Puisseguin’s Pierre Täix of Chateau Fongaban practices “la lutte raisonneé,” or “the reasoned struggle,” using non-organic means only when absolutely necessary. Like any great parent, Cabernet Franc supports the ultra-ripe Merlot with a bit of spiced background. Some of the best values in Bordeaux can be found in and around Saint-Emilion, and this wine is no exception.
