Emmanuel "Manu" Rybinski is a young, well-trained vigneron, yet his experience in winemaking has taken him from France to Australia to California to learn first hand winemaking techniques around the world. Now settled in southwest France in Cahors, he turns out some fantastic Malbec-based wines. Taking over the family estate and farming organicly, he coaxes beautiful fruit flavors from their younger vines for this cuvée. No oak to be found, the wines are pure plum, violet, blackberry and finish with a kiss of mineral.

Serving Suggestion: Best with grilled meat or sausage. The grill flavor is key to pairing with the dark fruit and light smoke. Of course oven roasted chicken with a mop of BBQ sauce will be excellent too.

PEPPER, BLACKBERRY, ANISEED, & A TOUCH OF COCOA

Emmanuel Rybinski knows that great wine is made on the vine, and he devotes most of his time to carefully farming his small vineyard (which of course makes us at Wine Authorities get all swoony). Debudding and judicious pruning means that his Malbec bunches have plenty of room to grow healthy and ripe, qualities reflected in the wine. A peppery prickle gives way to complex blackberry and spice, and tasteul use of used French oak adds a melty texture without any alteration of the flavor.

Serving Suggestion: Fennel sausage with cheesy polenta and oven roasted tomatoes, a terrine of bleu d'auvergne cheese and fig with a dash or armagnac.

OPULENT STONEFRUIT & TANGY CITRUS, RIVER STONE & AUTUMN FOG

Amphora-matured on the lees, this Chardonnay is one of Manu Rybinski’s most experimental wines, but it’s also one that reaches furthest into the past. Radiating bright acidity, ripe fruit, and earthy, minerally mystique, it’s perhaps equally derived from its varietal, terroir, and naturalistic origins: nature and nurture. "K-libre” is simultaneously a play on the word caliber and a reference to the wine’s freestyle fermentation.

Serving Suggestion: Smoked trout on rye rusks w/ cream cheese, cucumber, & dill. Artichoke & tomato salad w/ Rocamadour (or ripe, creamy, goat cheese) & pimentos on endive “boats."

INTENSE CHERRY JUICE & CASSIS, FIRM & DRY, ATTENTION-GRABBIN'

While most of us will agree that the “Délit-K” is absolutely a delight, its name actually denotes something rather different; always tricky, that Troteligotte! “Delit” denotes a transgression because this is a wine that breaks some of the well-established rules of rosé. That said, it maintains the most endearing characteristics of pink wine. Refreshing, lush, and evolving with age, it’s both familiar and confounding. Perhaps the mugshot-inspired label denotes its status as most-wanted?

Serving Suggestion: Danish dark rye crostini w/ duck liver & pork paté, butter, capers, & dill. Grilled summer squash skewers w/ tomatoes, ripe bell peppers, pineapples, & Vidalia onions.
