Of all the things we might accuse Puglia’s home-grown star, Negroamaro, of, gentleness probably wouldn’t be at the top of the list, but Niní Palamá has developed a notable and distinctive talent for taming the brooding reds that populate the Salento peninsula. This rendition carries forward the concentrated dark fruit and baking spices associated with the Negroamaro variety yet clocks in at an outlandishly reasonable 12.5% ABV with delicate tannin and guzzleable gusto!

Serving Suggestion: Charcoal-grilled sausage & minced pork skewers w/ rosemary, parsley, & grated pecorino. Baked potato & eggplant w/ parmesan, puréed tomatoes, & garlic.

A bold red with blackberry fruit both elegant and rustic. Ninì Palamà is a restaurateur and vinicoltore in the southern Pugliese town of Cutrofiano. His wines are named for his father Michele Arcangelo, and they herald the divinity that rises out of Salento's chalky, clay-rich soil. This luscious Primitivo is aged in concrete, allowing full expression of its ripe brambly fruit and evergreen spice mix of cedar, clove, and rosemary. Palamà manages to soften the high alcoholic bite typical of early-ripening grapes like primitivo, coaxing velvety tannins in harmonious balance with its earthy fruit.

Serving Suggestion: Veal involtini stuffed with fennel, thyme, and blood oranges. Troccoli pasta sauced with squid ink and garlic.
