This is Diane & Philippe Cauvin's pure Negrette grape cuvee from a single parcel of vineyard with iron rich soils of pebbles, gravel and sand. The distinctive soil gives the wine a softer but more intense flavor of the Negrette grape, almost heightening its characteristics. This is the most pure expression of wine from Fronton, a standard by which others are measured!

Serving Suggestions: Cassoulet, the bean, pork, duck and sausage casserole of southwest France is a classic pairing, since they originate in the same region.

BRIGHT, FRESH SUMMER GARDEN AROMAS, SILKY RIPE RED FRUIT

Philippe and Diane Cauvin are champions of the heat-loving Negrette grape, which is grown almost exclusively in their little corner of France's Sud-Ouest, and they use fully biodynamic farming methods despite the area’s fickle climate. The deep black but thin-skinned Negrette stars in this lovely Rosé. It goes beyond your average sunny day quaffer. A bit round, a bit soft, this is a rosé for breezy summer nights rather than scorching afternoons.

Serving Suggestions: Baked or grilled NC flounder with sungold tomato concassé. Crunchy crostini with robiolo cheese, dill, and caper.

RASPBERRY & WHITE PLUM, BREEZY SPARKLE, A TOUCH OF GRAPEFRUIT

Philipe and Diane Cauvin have essentially bridled the finicky Négrette grape into graceful submission with their catalogue of wines that seem to improve with each passing vintage. This is their newest offering, a delectably refreshing "petnat" sparkling rosé with pretty mousse that evaporates gracefully on the palate. A touch of ruby red grapefruit aroma adds serious depth. Great stuff. (slight sediment from the natural fermentation in bottle is harmless)

Serving Suggestions: Breakfast? I mean, you shouldn’t (?) drink wine before noon, even on a Sunday, but seriously pair this with breakfast foods.
