This special cuvée from Cathy Izarn is a testament to the synergy that she has encouraged between her land, vines, and work-intensive, fiercely naturalistic methods. Bursting with black raspberry and succulent baked strawberry, this powerfully ripe monolith of fruit is marbled with the complexities of chalky earth (from which the wine's name is derived), exotic mediterranean spices, and a touch of oaken vanilla richness. Vive le Languedoc!

RIPE BLACK RASPBERRIES, GARRIGUES. FIRM & FIERCELY PURPLE

Nestled amongst the garrigues surrounded by pine forest, the few acres of Borie la Vitarèle's oldest vines are treated like a private garden employing biodynamic compost made from local plants. Hand-harvesting ensures quality, and the wine is aged for 12 months in French oak. Dark purple, it exudes fresh aromas of ripe raspberries, thyme, and lavender. The generous aromas of black fruit, dark chocolate, and light vanilla oak are utterly seductive.

Serving Suggestion: Leg of lamb roasted slowly w/ garlic & rosemary. Washed rind cheeses w/ chutney; shish kabobs.

France's Midi, its south, is a massive if imprecise viticultural paradise nurturing some of the nation's most expansive and generous reds. This offering from Saint-Chinian's Jean-François Izarn is an aptly named ambassador of the Mediterranean plain, bringing together broad shouldered Syrah & Mourvedre (grown in stony, hillside plots) and Carignan (grown in white shale and slate). Powerfully ripe and wrapped in toasty nuances of French oak, it's simultaneously suave and uncompromisingly intense with concentrated black fruit, Christmas cake, and Provençal spices.

Serving Suggestion:  Lamb tagine braised w/coriander, cumin, cinnamon, & paprika. Roasted Brussels sprouts w/ rosemary balsamic glaze.
