In the tradition of such classics as “Son of Godzilla,” the “Hijo de (son of) Rubentis” is a Méthode Champenoise sequel truly worthy of Amestoi's cult classic Txakolina rosé. In typical fashion, the grapes are harvested slightly underripe to hammer home the signature gleam of acidity, minerality, Atlantic-ness, and leanness that Guetarian wines are famous for. The full-on sparkle (rather than typical spritz) enhances the impression of body and complexity while doing nothing to diminish the characteristic refreshment we love. Txakolin-dantza!
