Clocking in at 16% alcohol (not atypical), this beautiful beast owes its imposing stature and luxurious lushness not only to the Amarone process but to low yields, old vines, and the presence of local but lesser-used powerhouse grape Corvinone. An exceptional Amarone value, the Corte Majoli is made using the traditional method of drying the grapes to raisins, then pressing said raisins to extract their sweet goodness. Then it's fermented dry and yields a powerful red with rich aromas and flavors. The alcohol is elevated, as is normal for an Amarone, and the intensity goes to 11 on the 1 to 10 scale. This hearty red shows the fruit of Corvina, but also the classic Italian meaty earth tones typical of classic Amarone.

Serving Suggestions: Hard Reggiano cheese, roast beef with olives and onions, risotto with sausage and Parmesan cheese

Giulio Cocchi's original recipe Americano is more than just a simple aperitif in the town of Asti - in fact, it is the aperitif by definition, a piece of this century's local cultural and gastronomic history. This is the original Americano, produced without a break since 1891 according to an entirely natural recipe: white wine aromatized with many herbs and spices, no artificial coloring, flavoring or additive of any kind.

It is produced in limited quantities and matured for a year before being put on sale. The new bottle in that form of the classic clear glass Bordeaux shape is designed to be show the aperitif's natural origins as a wine, quite different to other inventive aperitifs based on alcohol.

Serve chilled in a tumbler or in an appropriate glass with a twist of orange peel and if desired, ice cubes. A splash of soda is indispensable to make the full aroma and perfume come out at their best. This is the classic way to serve it, as preferred by the "purists" who have known this drink forever. Outside of Italy it is revered as one of last great blanc/bianco aperitif wines, essential to a wide range of classic mixed drinks.

La Casaccia translated roughly to "ruined house" (we originally heard a decisively less kind translation), and Giovanni Rava does apparently go about making his wines in an atmosphere of magisterial decrepitude. There's nothing ramshackle about this beautifully complex and structured Barbera though; it's built like the proverbial brick...uh...wine cellar. Rich threads of blackberry and traditional prickle weave with that great Piemontese woodsy herbalosity to form a solid braid of intoxicating aroma and flavor.

Serving Suggestions: Flank steak sandwich with steak out of the fridge from last night. Whip up some garlic mayo and serve with red onion on a slipper-soft ciabatta. That's a proper builder's lunch.

In 2010, after years of working in larger wineries, Chiara Penati and her husband purchased a tiny, 1.5 hectare vineyard in the hills of Tortona, a little known pocket of the Italian Piedmont. They farm their land organically and make their wine naturally – and only about 2,000 cases a year of it. This Barbera-based field blend, which also includes Dolcetto and several other local red grapes, is fantastically fresh with an exciting energy almost reminiscent of Lambrusco – minus the bubbles.

Welcome to Daniele Saccoletto's world, where the DOC (Italian wine authorities, but not cool like us) doesn't matter. Extremely long fermentation times with natural yeast, followed by years of aging, result in some awesome, unique expressions of familiar Piemontese varieties. His Grignolino is brickish and tawny (a sure sign of a red wine with some years to it), with natural funk, red fruit and suggestions of earthy olive, balsamico, and herbaceous spice. Firm tannins are balanced by spritzy acidity, making this a wine for the adventurous.

Fabio Lini and his daughter Alicia are responsible for this delicious dry, pink version of Lambrusco. Tart and thirst quenching with light tannin from the grape skins, this gentle pink wine has a firm backbone, perfect with picnic food.

Vermentino is something of a chameleon. It can be fun, fresh, and easygoing, or tropical and concentrated, or minerally and elegant. Increasingly, especially among Sardinian and Tuscan producers, we’re encountering enigmatically unconventional, almost-orange offerings like this one. Four days of skin contact give this wine a subtle yet unmistakable amber tone and a hint of tannic texture, while the winery’s proximity to the shore provides an intriguing suggestion of brininess on the nose.

Quercus Ilex is the holly oak, found plentifully at the Caprili winery and a symbol of Montalcino. Firmly structured, exuding youthful black fruit, and earthy, this wine is made from Sangiovese Grosso, a famed local clone of Brunello. While this minimally-aged outing isn’t likely to be mistaken for Brunello, it’s still impressive stuff. Grown organically and vinified utilizing only ambient and indigenous yeasts, this a fantastic value. Pair it with all kinds of Italian cuisine.

This region is home to several distinct styles of wine starring the Corvina grape, including standard Valpolicella, the dried grape version called “Amarone,” and “Ripasso,” which falls somewhere in between. Ripasso is begun like regular wine from standard grapes, but later on dried grapes (like the ones used for Amarone) are added prior to a second fermentation. This adds color, depth, body, and additional flavors, bringing out raisins, cherry, pink peppercorn, and sweet spices.
