Fresh, juicy, very dry, and full of minerally terroir, this Albariño from the Laxas (la-shas) winery is first class - produced from old vines in the more oceanic reaches of western Galicia. This white shows an Atlantic saline-like quality which renders it positively delicious with seafood, and the melon, pear, and mineral notes are almost like a meal in themselves. Finishing with impressive length, richness, and a bit of banana essence, this is serious Albariño for the money.

Serving Suggestion:

In Spain they would eat gooseneck barnacles, but here in the US we're more than happy to pair this with nearly any great shellfish, especially mussels will be perfect.

Harkening back to the methods of producing sherry prior to the 20th century, this is an exciting, micro-production, un-fortified version of a classic Oloroso. Only one barrel was made of this subtle “sherry” from Palomino grapes dried for 48 hours in the Andalcian sun to increase the sugars enough to boost alcohol above 15% so the flor would thrive. This is a great dry wine, or an great understated sherry, straddling both styles.

Serving Suggestion: Spanish Jamon in all of its incarnations. Roncal or Manchego cheeses w/ Marcona almonds & oil aged olives. Classic fried tapas!

This restrained and refreshing gem is made mostly from Viura, the dominant grape in “Cava country” or Catalonia, where it’s known as Macabeu, but this is not Cava country. In fact, Finca Torremilanos is the only producer in Ribera del Duero which has been entrusted with the ability to describe its bubblies as “Cava.” Pristinely pale with vaguely emerald undercurrents, its born among vines aging as many as 180 years and mixes a minerally zest through its citrus and orchard fruit.

Brimming with an almond-like waxiness, savory mystique, and a powerful suggestion of salinity (without any actual saltiness, obviously), this is a wine that you may find yourself wanting to eat as much as drink. It’s perplexing, perhaps, that it can manage to be as clean as refreshing it is. This is the coveted conundrum of Fino! Completely dry and clocking it at a relatively gentle 15% alcohol, this isn’t as much an acquired taste as it is a friend you’ve always known you’ve had but haven’t yet had the pleasure of meeting.

Serving Suggestion: Marcona almonds are practically its soulmate. Seafood spreads (even our Carolinian Calabash stylings) are a dream.

Wondering what orange wine is? Here’s the scoop: white wine grapes are pressed, then the juice is left to ferment with the skins instead of being filtered off. This imparts more body, color, and texture, as well as yielding a much more natural, less processed wine. Quirkily, grapes most often found in sherry are used here: Palomino grapes for the juice, with Pedro Ximinez skins added to the fermentation and left to mingle for 25 days.

Serving Suggestion: Lemon grilled tilapia w/ jasmine rice. Any combo of hard sheep’s milk cheeses, such as Manchego, Roncal, or Ossau-Iraty.

The “imaginary friend” of this wine is the skins of Pedro Ximenez, instead of its own Palomino skins, which winegrower Alex says are not as delicious tasting as those of PX. This is not only an exotic and interesting production method, but the wine tastes fantastic and engaging!

Started in 1832, this is a wine to enjoy before the style goes extinct and the wineries defunct.
