It’s quite possible that the producers of Washington’s Yakima and Colombia valleys have recognized Merlot’s greatness more than any other wine region of the new world. Here, as in Bordeaux’s Right Bank, it doesn’t play second fiddle to half-brother, Cabernet Sauvignon, and speaking of Bordeaux, this Merlot-piloted blend from Airfield contains each of the variety’s colleagues from its home turf. Even Petit Verdot, which is typically found in the vineyards of the Left Bank makes an appearance, well suited to the hot dry conditions east of the Cascades.

Serving Suggestion: Filet mignon w/ sautéd flat beans & boiled fingerling potatoes w/ chives. Hearty empanadas w/ mole, sweet potato, & tempeh (or dark meat of turkey for a more carnivorous option).

Hyatt is a small, domestic winery that's doing it right. Established in 1983, they make great wines at reasonable prices that are stinkin' good. Their Cabernet Sauvignon is a great domestic value and shows complex berry flavors that are typical of this part of Washington. The aromas are pure Cabernet Sauvignon, while the wine's mouth-feel is lush and supple with balanced tannins which makes it a more versatile and less edgy Cab.

Serving Suggestions: Veal chop with porcini mushrooms and demi-glace. Cedar plank grilled pork tenderloin with herbed butter and Moroccan couscous.

Constituting a counterpoint to the intensely grapefruit-centric renditions of New Zealand and the variety’s home turf in the Loire Valley, this suavely tropical and mouthwateringly aromatic offering is simultaneously sultry and summery.
