2017 Cabernet Sauvignon (Calcu, Vinedos)

Calcu, Cabernet Sauvignon, Colchagua Valley, Chile 2017

100% Cabernet Sauvignon

CASSIS & BLACKBERRY, AROMATIC PEPPER & TOAST

This textbook Cabernet Sauvignon is a stunning value, showcasing Colchagua’s propensity toward herbaceous, peppery flavors and aromas. Muscular ripeness and beautifully balancing acidity make for an impression that is as pretty as it is powerful. Whispers of Carmenere and Petit Verdot (coupled with French oak aging) lend delicious echos of Cabernet’s Bordelais ancestry. Yum!

Serving Suggestions: Bison burgers w/ sharp cheddar or blue cheese. Poblano enchiladas w/ pinto beans & pepper jack cheese.

2017 Cabernet Sauvignon (Peñalolén)

Peñalolén, Cabernet Sauvignon, Maipo Valley, Chile 2017

75% Cabernet Sauvignon, 9% Cabernet Franc, 8% Petit Verdot, 8% Merlot

CURRANT & BLACKBERRY, CLASSIC, BALANCED BY BRIGHTNESS

Not to (almost) admit to judging various books by their covers, but this classically structured Cab from Chile’s Maipo provides a bit of a surprise. Its unconventional, perhaps trendy, label and predictable 14% alcohol might lead one to expect an ultra-modern, aggressively New World-ish outing (not that there’s anything wrong with that!), but this has a brighter, more classically Cab-ish edge that wouldn’t be out of place in riper, more contemporary Left Bank Bordeaux. Hailing from a well-drained, gravelly slope, this impressively structured creature includes small portions of Merlot and Cab Franc in an appropriate nod to Cabernet Sauvignon’s Bordelais traditions.

Serving Suggestion: London broil w/ cracked pink & black peppercorns w/ garlicky gai lan & roasted new potatoes. Empanadas w/ black beans, onion, black olives, & bell pepper.

Vina Apaltagua, Carmenere "Gran Reserva" Envero, Apalta Valley, Colchagua Valley, Chile 2018

93% Carmenere, 7% Cabernet Sauvignon

ESPRESSO, BLACKBERRIES, ROASTED PEPPERS, OAKEN VANILLA

With its origins in Carmenere vineyards planted more than sixty years ago, this robust and multifaceted cuvée demonstrates both the signature characteristics of the grape's distinctive personality and the finesse which the estate has encouraged through careful selection and judicious aging in large oak barrels. The result is an impressive pillar of coffee flavors scaled by wisps of toasty vanilla, dark chocolate and jalapeño.

Serving Suggestion: "Bistec a lo Pobre" - Chilean sautéed steak on a bed of onions, topped with a fried egg (after all, this wine loves protein), and served with rustic peppery french fries. Mole Poblano!

2018 Carmenérè "Gran Reserva" (Calcu, Vinedos)

Viñedos Calcu, Carménère Gran Reserva, Colchagua Valley, Chile, 2018

{sustainable} 90% Carménère, 8% Petit Verdot, 2% Cabernet Franc

BLACKBERRY, DARK CHOCOLATE, VIOLETS, GRANITE

Chile’s signature grape, Carménère, is a unique one. It has a reputation for being peppery, much like its parent grape Cabernet Franc, but here those qualities are subtle and far overshadowed by leathery, dark fruit flavors. The Calcu estate is nestled between two small villages, Marchigüe and La Estrella, in the Colchagua Valley where the wines benefit greatly from a terroir rich in granite and clay. Give this Carménère a try, it may be your new favorite!

Serving Suggestion: Empanadas de Pino (Chilean-style beef empanadas). Grilled tofu steaks topped with fresh chimichurri and thinly sliced chili peppers.

100% Pinot Noir

PLUM & CRAISIN, JUICY, LUSH, SUBTLE SPICY OAK

From Apaltagua's vineyards in Chile's cool and Pacific-influenced region of southern Curico comes this most impressive of Pinot Noir values. 2021 Sauvignon Blanc / Semillon "Gran Reserva" (Calcu, Vinedos)

Calcu, Sauvignon Blanc / Semillon "Gran Reserva", Colchagua Valley, Chile 2021

70% Sauvignon Blanc, 30% Semillon

PINEAPPLE & JUICY CITRUS, RIPE & TROPICAL, VIBRANT & WHOLESOME

Chilean Sauvignon Blanc has increasingly become one of the most sought-after specialties of South America and frequently acts as a counterpoint to the lean, razory offerings associated with New Zealand's Marlborough. These often distinctly more tropical renditions owe their character to a warmer, drier climate. Representing this style very well and reminiscent of the juicy, full-figured Sauvignon Blancs of California (particularly those of Napa Valley), this denizen of the Andes' foothills leaps aromatically from the glass with bold, citrusy bravado.

Serving Suggestions: Mussels w/ garlic, butter, & lemon. Tomato, orange, and cucumber salad w/ scallions, corn, coriander, chives.
